The Zorgvliet Cabernet Sauvignon stands as the pinnacle of the Zorgvliet collection, embodying all the expectations of a top-tier Cabernet Sauvignon. It greets the nose with powerful dark fruit aromas, predominantly cassis, complemented by subtle spices and cocoa. On the palate, it delights with concentrated cassis flavors, Fynbos herbs, and a magnificent cedar finish, showcasing impressive persistency. Its ample yet finely interwoven tannins complete this remarkable Cabernet from Stellenbosch-Banghoek.
Das Traubengut fermentierte teilweise spontan bzw. wild. "Spontan" bedeutet in diesem Kontext, dass keine kommerziellen Hefen zum Einsatz kamen, um die Fermentierung in Gang zu setzen. Lediglich die natürliche, in der Umgebung und auf der Frucht vorkommende Hefe, brachte den Gärungsprozess in Gang. Nach Abschluss der Gärung reifte der Wein 18 Monate lang in französischen Eichenholzfässern, von denen 33% Neuholz ausmachten.
