Treatment in the cellar

Das Traubengut fermentierte teilweise spontan bzw. wild. "Spontan" bedeutet in diesem Kontext, dass keine kommerziellen Hefen zum Einsatz kamen, um die Fermentierung in Gang zu setzen. Lediglich die natürliche, in der Umgebung und auf der Frucht vorkommende Hefe, brachte den Gärungsprozess in Gang. Nach Abschluss der Gärung reifte der Wein 18 Monate lang in französischen Eichenholzfässern, von denen 33% Neuholz ausmachten.
