Treatment in the cellar

Each grape variety was harvested separately, destemmed, and hand-sorted. The wines underwent fermentation for 20 to 40 days on the skins, depending on tannin structure, with three to four pump-overs daily. After fermentation, the wine was transferred to French oak barrels (55% new, 2% third fill, and 42% fourth fill) for 24 months, followed by a stringent selection process to choose only the best barrels from the finest blocks.
