The Saxenburg Private Collection Sauvignon Blanc presents a stunning intricate character with lively fruit nuances that reflect the Cape's terroir. You'll find delightful aromas of gooseberries and kiwi intermingled with subtle mineral hints. This wine reveals an enchanting combination of both green and tropical fruits, such as passion fruit, nectarines, and apricots. Exceptional balance and depth are paired with a sleek and elegant profile. Layers of lemongrass and salty minerality evoke the soothing influence of the ocean breeze, adding intrigue and harmony. With a prolonged fruity finish and refined structure, it displays excellent aging potential.
Only the finest grapes were selected for the Saxenburg Private Collection Sauvignon Blanc. After 18 hours of skin contact, the grapes were pressed, allowing the juice to rest before being inoculated with five different yeast cultures. A small portion of Sauvignon Blanc (5%) underwent natural fermentation in older oak barrels, while 4% Semillon was included for added texture on the palate. Following three months of lees contact and stirring, the wine was blended and prepared for bottling. It spent four months on the lees to enhance its complexity, without undergoing malolactic fermentation.
