Treatment in the cellar

The grapes for the Palladius were meticulously sorted by hand and pressed in a traditional basket press. The juice flowed directly into clay amphorae, concrete tanks, and old oak barrels, where spontaneous fermentation occurred without additives, followed by 24 months of aging. The wine was bottled unfiltered and unfined.
