Nach dem Hautkontakt über Nacht wurden die Trauben gepresst und der Saft in Edelstahltanks gepumpt. Nach der kühlen Gärung durfte der Wein noch längere Zeit auf der Hefe verbringen, um einen vollen und abgerundeten Wein zu entwickeln.
