Treatment in the cellar

The grapes for the Protea Cabernet Sauvignon were handpicked in the early morning to preserve the delicate flavors and aromas. Upon arrival at the winery, they were placed in stainless steel tanks for fermentation. After fermentation, the wine was separated from the skins and underwent pressing. Both free-run and pressed wine matured for 12 months in French oak staves and stainless steel tanks before bottling.
