Kloovenburg Eight Feet White is a masterfully crafted blend dedicated to the family du Toit's four children, encapsulating their legacy through this exquisite cuvée. Treatment in the cellar All grapes were harvested by hand in the early hours of the morning and then cooled overnight in a temperature-controlled room at 5 °C. All components were harvested at different stages of ripeness to ensure a balanced final cuvée with good fruit purity, freshness, complexity and length. All components were pressed separately and as whole grapes. The free-run juice was then drained into a stainless steel tank to settle at 8 °C for 24 hours. No enzymes were used during the clarification process. The juice was transferred from the coarse lees into 2000-litre concrete tanks. The wine fermented naturally, which could take up to three months. No malolactic fermentation took place in order to preserve more of the natural acidity. After fermentation, a small dose of sulphur was added to the wine, after which it remained on the fine lees. The wine spent a total of seven months in concrete tanks before being blended and bottled.
