The Iona Solace Syrah enchants with intricate aromas of blackberries, red fruits, and spicy pepper. Its palate is energetic yet elegant, characterized by marked floral notes. This vintage has developed complexity and robustness, exhibiting a powerful character and spice, enhanced by impressive structure and an alluring bouquet from 15% whole-bunch fermentation. The cool climate contributes freshness and finesse, with aromas of garrigue and fynbos melding harmoniously with hints of black olives and dark fruits.
This Syrah radiates mineral energy and white pepper spiciness, enriched with lush blackberries and fragrant herbs, complemented by a refreshingly bright acidity. Expressive and characterful, it evokes the fine wines of the Northern Rhône, achieving perfect harmony between ripe black fruit, subtle peppery notes, and sweet spice. It is now truly reaching its peak. What a remarkable wine!
The grapes were hand-harvested into small boxes and stored overnight in a cold room. Careful hand selection took place before destemming. 10% of the grapes were left as whole bunches to add complexity.
Fermentation commenced naturally, with gentle hand plunging of the cap twice daily. Fermentation temperatures peaked at 28°C.
The wine was then transferred into 500-liter French oak barrels, where malolactic fermentation occurred (14% new oak, the rest third, fourth, and fifth passage).
Sustainable viticulture techniques were adhered to throughout the winemaking process: no enzymes, cultured yeasts, or sulfur were used, and the wine was neither fined nor filtered, with only minimal sulfur added before bottling.
