The Iona Sauvignon impresses with its lively freshness, revealing vibrant grapefruit, invigorating lime, and lush gooseberries, enhanced by exotic tropical fruit and subtle floral as well as herbaceous grassy notes. The finish is a delightful echo of white pear candy. This exceptional 'cool climate' Sauvignon Blanc showcases a dynamic mineral character, refined elegance, and harmonious balance. Its finish is complex, lingering, and distinctly dry.
Following harvest, the perfectly ripe grapes were fermented at controlled cool temperatures in stainless steel tanks. During fermentation, the yeast underwent regular stirring (batonnage), imparting excellent structure and fullness to the wine. Upon completion of fermentation, the Sauvignon Blanc was blended with 4% oak-aged Semillon to achieve a finely rounded balance.
