Nach der Lese fermentierten die perfekt gereiften Trauben bei kühl geregelter Temperatur in Edelstahltanks. Während der Fermentierung wurde die Hefe regelmäßig aufgerührt (batonnage), was dem Wein seine hervorragende Struktur und Fülle verleiht.
