Fairview La Beryl Blanc Straw Wine 2024 is a remarkable dessert wine crafted from the aromatic Muscat de Frontignan and Chenin Blanc grapes. Its intense bouquet reveals aromas of ripe apricots, honey, and fresh citrus. The palate offers a seductive blend of tropical fruits and zesty citrus notes, beautifully rounded out by a silky texture and refreshing acidity.
Treatment in the cellar
In early February, the winemaking team handpicked the grapes over three days nd are delivered to a cool, airy shed and laid them on straw mats to dry. Over the next few weeks, the berries shrink and dry out naturally, losing up to 75% of their moisture.concentrating their sugars and aromas. After drying, the grapes were pressed, and the juice fermented slowly in stainless-steel tanks. Extended skin contact builds texture, while months of careful fermentation added balance and finesse. Some maturation time is in older barrels and some in clay amphorae.
