David & Nadia Aristargos stands out as an exceptional white wine blend from South Africa's rising Swartland region. This meticulously crafted cuvée consists primarily of Chenin Blanc, with contributions from Roussanne, Semillon, Clairette Blanche, Viognier, Verdelho, Marsanne, Colombar, and Grenache Blanc, showcasing remarkable freshness, balance, and a refined structure. The aromatic profile gregariously mingles fine citrus fruits, dried apples, and pear, rounded off with a whisper of white pepper, culminating in a particularly lingering finish.
The grapes for this Swartland white blend were hand-picked and whole-bunch pressed, allowing the juice to settle cool before fermentation in barrels. Indigenous yeasts initiated the spontaneous fermentation, and malolactic fermentation completed in barrel, with the wine aging in older French oak with minimal sulfur addition.
