Treatment in the cellar

The grapes for this Sauvignon Blanc were harvested in the cool morning hours and chilled in a cooling room. Once the temperature dropped below 10°C, the grapes were carefully destemmed, crushed, and pressed. The juice was quickly filled into stainless steel tanks. During this process, delicate juice was protected from oxidative degradation by the use of ice chips forming a protective carbon dioxide 'blanket.' The juice then rested for 48 hours before inoculation with yeast cultures. A cool fermentation at 11°C preserved the wine’s freshness and intense tropical aromas. It rested on fine lees for an additional four months to enhance weight and create a creamier mouthfeel.
