Der Saft der Chardonnay-Trauben wurde in Tanks aus Edelstahl kalt fermentiert - ein Teil mit wilder natürlicher Hefe, und der andere Anteil mit neutraler Hefe. Der Wein wurde nicht geholzt und unter gelegentlichem Aufrühren fünf Monate lang in Stahltanks auf der Hefe gelassen.
