The Shannon Triangle Block Semillon seduces with a richly layered bouquet featuring lanolin wax alongside captivating scents of ginger, quinine, lime zest, cardamom, and a hint of minerality. Its natural fermentation leads to a sumptuous mouthfeel, revealing outstanding complexity and density. A gentle salinity accentuates the enticing spice and citrus notes, evoking the essence of traditional old-world Semillons.
Treatment in the cellar
The grapes for this vintage of Shannon Semillon come from a 15 plus-year-old vineyard plot covering 0.5 hectares. Fermented naturally in barrels, the Semillon was aged on the lees for 11 months in 30% new French oak barrels after fermentation, during which time it was regularly stirred (batonnage) to impart a beautiful complexity and richness to the wine.
