The Savage White 2024 enchants with a multifaceted aroma featuring grapefruit confit, peach tea, green pear candies, and subtle notes of chamomile, honey, and pineapple. On the palate, the wine reveals an impressive density of fruit glycerine weight balanced with enticing acidity. This cuvée of Sauvignon Blanc and Semillon aged in oak barrels for ten months, which adds a charming hint of candied mandarin and vanilla pod, along with a vibrant, waxy minerality in the finish.
Savage White is a premier cuvée consisting of 69% Sauvignon Blanc and 31% Semillon. Whole bunches were pressed and spontaneously fermented in barrels. "Spontaneous" indicates that no commercial yeasts were added; only natural yeasts present on the fruit and in the environment initiated fermentation. After fermentation, the Sauvignon Blanc was blended with the Semillon, which had completed malolactic fermentation. The wine aged for 10 months in barrel (20% new oak) before bottling.
