Savage Girl Next Door is a remarkable Syrah, crafted with meticulous detail. Its sophisticated aromatic profile, featuring pressed violets and cherry blossoms, merges beautifully with intriguing hints of black cherries, plums, pink musk, graphite, and subtle cherry cola notes. On the palate, it showcases a stunning intensity and generous fruit-forward characteristics, combined with an impressive clarity and focus. A notable saline and maritime touch complements the juicy acidity, elegantly providing momentum and vitality to the wine. This delicate creation manages to shine without being overpowering, offering a remarkable purity of fruit and textural finesse.
The whole bunches underwent spontaneous fermentation, with 50% of the fruit remaining whole. 'Spontaneous' indicates that no commercial yeasts were added, allowing the natural yeasts present on the grapes and in the environment to initiate fermentation. Post-fermentation, the wine was gently pressed using a traditional basket press and transferred to neutral barrels for a ten-month maturation period.
