The Sadie Family Columella 2023 is an artfully crafted blend that enchants with its cool, mineral notes and herbal accents, complemented by a complex play of spices. Fruity aromas of blackberry, cassis, and black cherry complete the profile. Treatment in the cellar

The grapes were pressed in a traditional basket press and then spontaneously fermented in large open fermenters for three weeks in concrete tanks. After fermentation, the wine aged for 12 months in French oak barrels, with 5% being new wood. Following this, the wine was transferred to large oval foudres, where it spent an additional year on fine lees. After a total aging period of two years, the wine was bottled unfiltered and unfined.
