Treatment in the cellar
The grapes were hand-harvested, sorted, and whole-bunch pressed, with the free-run juice chilled for two days. Fermentation took place at a controlled temperature of 10°C using natural yeasts in previously used Burgundy barrels of 228 and 300 liters for eight to ten weeks. The wine rested on the lees for nine months prior to bottling.
