The grapes for Raats Original Chenin Blanc originate partly from vines growing on weathered granite and partly from those on Table Mountain sandstone. The grapes from these different soil types ferment separately, with the granite grapes imparting a distinctive chalky minerality, while the sandstone contributes tropical fruit and structure. After a cold maceration for two to three days, the juice undergoes cold fermentation in stainless steel tanks (14º - 16ºC) and ages on the lees for 6 months before bottling, without the use of oak.
