The Paul Clüver Seven Flags Pinot Noir 2021 epitomizes the essence of superior Pinot Noir: exceptional fruit clarity and superb structure, harmoniously balanced with natural acidity. Its bright crimson hue enchants the eye, echoing ripe black fruits. On the nose, this esteemed wine offers seductive aromas of dark berries, cherries, raspberries, and spicy notes with a touch of cigar box. The palate continues these flavors with savory hints, concluding with remarkable length, complexity, and freshness. The estate’s older Pinot Noir vineyards, aged between 13 and 19 years, are selected to produce this iconic wine.
For this Pinot Noir, exclusively the Burgundy clone 113 was utilized. Hand-picked with utmost care, the grapes were crushed and subjected to a six-day cold soak at controlled temperatures of 12°-14°C. Fermentation initiated naturally, followed by the addition of selected Burgundy yeast cultures. Post-fermentation, the wine underwent malolactic fermentation in French oak barrels, where it matured for 12 months on fine lees.
