The Paul Clüver Sauvignon Blanc radiates with a clear, luminous hue and unfolds a bouquet of classic notes including fresh passion fruit, delicate white flowers, and whispers of gooseberry and currant. Subtle hints of nettle, minerality, and a touch of salinity complete this aromatic tapestry. Die Lese fand nachts statt, um maximale Frische und Geschmack im Wein zu erhalten. Die Trauben wurden vorsichtig gepresst und vor der Gärungt mit unterschiedlichen Hefen versetzt. Regelmäßiges Aufrühren förderte die Fülle. Insgesamt verblieb der Wein vier Monate lang auf der Hefe. Der kleine Anteil von Sémillon (12%) fermentierte teils in Edelstahltanks sowie teilweise in dritt- sowie viertbefüllten Fässern aus französischer Eiche.
