This wine embodies the art of blending varietals from selected regions to craft an outstanding product. The grapes for the Neil Ellis Left Bank Cabernet Sauvignon Merlot are sourced from south-west facing slopes that belong to the coolest sites in Stellenbosch. It displays an intensely dark color and exudes aromas of ripe dark berries and raspberries, complemented by subtle graphite notes. On the palate, it presents itself as complex and elegant with finely structured tannins. With excellent aging potential, decanting is recommended when enjoyed young.

Treatment in the cellar

Fermentation began in stainless steel tanks, followed by further maceration and gentle pressing. The wine matured for 17 months in French oak barrels, 30% of which were new, while the remainder aged in second, third, and fourth fill barrels.
