Das Traubengut wurde bei optimalem Reifegrad per Hand gelesen und mit großer Sorgfalt ausgelesen, woraufhin im Keller der Fermentierungsprozess unter Hilfe lediglich natürlich vorkommender "wilder" Hefe in 400 Liter Fässern aus französischer Eiche stattfand. Der Wein wurde nach Abschluss der Gärung für weitere 12 Monate in französischer Eiche ausgebaut.
