The Iona Elgin Highlands Pinot Noir presents an alluring aroma of floral rose notes intertwined with rich black and red cherries, and a whisper of strawberries and spiced nuances. Its palate offers a juicy and intricate structure, elegantly textured, capped with a long, savory spice finish. Treatment in the cellar

The grapes were hand-harvested into small boxes and stored overnight in a cooling chamber. A careful hand selection was made prior to destemming, which occurred without crushing. Subsequently, the berries were cold macerated for 5-7 days before natural fermentation commenced in open fermentation vessels. During fermentation, which took place at a maximum temperature of 28°C, gentle punchdowns or pump-overs were performed by hand as needed.

The wine was then transferred into 500L and 300L French oak barrels, where malolactic fermentation took place (20% new wood, the remainder in second, third, and fourth fill). Aging on the lees lasted for 12 months. Subsequently, the wine was racked from the barrels and blended in stainless steel tanks. Before bottling, the wine clarified naturally over two months.
