The Illimis Grenache Noir is produced from carefully selected grapes from two respected vineyards in Wellington. The schist soils lend themselves to fine, chalky tannins and a rich aroma with a long finish. On the nose, enticing scents of roasted marshmallows, pomegranate, hazelnut, and nutmeg entice the senses. The palate reveals a harmonious medley of buchu, prickly pear, and vibrant cherries, accentuated by allspice and cardamom notes, leading to a characterful finish marked by spicy undertones and elegant, chalky tannins.
The Illimis Grenache Noir undergoes a minimalist vinification approach: grapes are primarily whole-bunch pressed, fermentation occurs naturally, and the wine matures for 7 months in previously used, neutral oak barrels.
