The Avondale Jonty’s Ducks Pekin Red enchants the senses with its aromatic complexity of blackcurrant, spicy licorice, and dark chocolate, paired with nuances of freshly brewed coffee. Das Traubengut wurde handgelesen, komplett entrappt, gequetscht und fermentierte anschließend spontan in Tanks aus Edelstahl, d.h. lediglich die in der Umgebung und auf der Frucht natürliche vorkommende Hefe brachte die Gärung in Gang. Die Gärungstemperatur stieg dabei bis zu 30°C an. Nach Abschluss der Gärung wurde der Wein in kleine Fässer aus französischer Eiche gefüllt, wo die malolaktische Gärung ihren Abschluss fand. Anschließend reifte der Wein 12-14 Monate lang in 225L Fässern aus zweit-, dritt- sowie viertbefüllter Eiche.
