Treatment in the cellar
The grapes for this aromatic Pinotage were hand-picked at optimum ripeness and fermented in open fermentation tanks on the skins at a controlled temperature of 25-28°C. After fermentation, the berries were gently pressed in a traditional basket press. The wine was matured in heavily toasted French oak and 15% American oak.
