Nur der beste und freilaufende Saft von höchster Qualität wurde nach dem Quetschen der Beeren für den weiteren Produktionsverlauf verwendet. Der Saft wurde anschließend langsam fermentiert. Die Gärung dauerte mehr als einen Monat an, woraufhin der Wein noch zwei Monate auf der Hefe reifen durfte, was ihm ein Maximum an Frische und Harmonie verleiht.
