The Springfield The Work of Time 2019 offers a harmonious blend in the Bordeaux style. The nose reveals a captivating aroma of ripe berries, complemented by delicate hints of cinnamon, clove, and anise. On the palate, the wine presents itself elegantly and balanced, showcasing intense fruit flavors and remarkable smoothness. The distinctive fruit emerges from the unique limestone soils of the Robertson region. This cuvée consists of 46% Cabernet Franc, 27% Merlot, and 27% Cabernet Sauvignon, exemplifying the fine art of winemaking.
Vor der alkoholischen Gärung blieben die Trauben zehn Tage gekühlt und ungequetscht in offenen Tanks (cold maceration). Die anschließende Gärung dauerte drei Wochen lang an. Der Maischekuchen wurde unterdessen dreimal täglich untergetaucht, um der Maische ein Maximum an Farbe und Konzentration zu entziehen. Ohne den Einsatz von Pumpen wurde in neue und zweitbefüllte 300 Liter Sequin Moreau Fässer umgefüllt. Die malolaktische Gärung erfolgte spontan im Fass, wo der Wein anschließend für 24 Monate reifte. In den Handel kam er erst nach weiteren vier Jahren Reifezeit in der Flasche. Mann könnte eine leichte Ablagerung bemerken, dieser Wein ist unfiltriert, ungeklärt und nicht stabilisiert.
