The Sadie Family Palladius is a remarkable white wine cuvée hailing from South Africa's Swartland region. Its bright, vibrant color hints at a palate overflowing with lively fruit and exceptional freshness, showcasing high-quality winemaking. The nose features a bouquet dominated by lime and other citrus fruits, complemented by a minerally, stony aroma and notes of stone fruit. On the palate, a savory salinity prevails alongside a fine creaminess, enhanced by hints of green apple and a crisp phenolic backbone. Die Trauben für den Palladius wurden Beere für Beere per Hand sortiert und anschließend in der traditionellen Korbpresse gepresst. Der Saft floss dabei direkt in Tonamphoren und Betoneiern, wo er nach Abschluss der spontanen Gärung ohne Zugabe von Zusatzstoffen fermentierte und weitere 12 Monate in alten Fudernfässern reifte.
