Treatment in the cellar

The grapes were handpicked and pressed whole in a cool environment without destemming. Only 20ppm SO2 is added to the must before fermentation, initiated spontaneously with indigenous yeasts, lasting up to six weeks. 85% was matured in stainless steel, with the remainder in five-year-old French oak barrels.
