The Tokara Reserve Collection Elgin Sauvignon Blanc is defined by its delicate straw yellow color, crowned with a vibrant green edge. Aromas of fresh Cape gooseberries and zesty lime intertwine intriguingly with hints of lemongrass and passion fruit. Its palate is both full-bodied and creamy, echoing the aromatic profile with enticing flavor layers, rounded out by a touch of blackcurrant leaf. The finish is refreshingly crisp and delightfully dry, leaving behind subtle mineral and saline nuances that beckon another sip.
The grapes were fully destemmed, crushed, and pressed immediately. The resulting juice rested overnight before the clear portion was decanted the following morning. Only the free-run juice was used for this Reserve Sauvignon Blanc. The juice fermented at a controlled temperature of 15°C in stainless steel tanks, with 4% fermented in large, older oak barrels and aged for five months. After fermentation, the steel-aged wine underwent five months of regular bâtonnage on the lees before stabilization and filtration for bottling.
