Treatment in the cellar

The grapes for this unoaked Chardonnay underwent a gentle crush, followed by soft pressing. The resulting juice was transferred to stainless steel tanks, where it underwent spontaneous fermentation using natural yeasts. One tank was kept at a controlled 13˚C, while the other was at 18˚C. Malolactic fermentation was inhibited, and the wine aged on fine lees before bottling for enjoyment.
