The Catherine Marshall Finite Elements Pinot Noir represents an exceptional creation from the Fine Arts Collection, celebrated for its exquisite balance and depth. This archetypal "cool climate" wine exemplifies the pinnacle of traditional winemaking craftsmanship. Expect an enticing bouquet of fresh cherries, cranberries, and pomegranate, seducing the senses. As it matures, it unveils the classic earthy notes of Pinot Noir, including hints of truffle and autumnal forest, promising a layered tasting experience.
Das Traubengut wurde komplett entrappt und teilweise leicht angequetscht. Die Maische wurde anschließend einer viertägigen Kaltquellphase unterzogen, um eine maximale Extraktion von Farbe und Aromen zu gewährleisten. Die Fermentierung fand in offen Gärtanks unter Zugabe ausgewählter Hefen statt, wobei der Tresterhut täglich untergetaucht wurde. Nach Abschluss der Gärung ging es in die Korbpresse wo der Wein in ausgewählten französischen Barriques die malolaktische Fermentierung abschloss und weitere Monate reifen durfte.
