The Stark-Condé Three Pines Cabernet Sauvignon enchants with elegant aromas of delicate violets, lush cassis, and ripe black cherries. On the palate, this superior Cabernet Sauvignon reveals a sturdy structure that harmonizes with a well-balanced complexity and a concentrated fruit core. Its refined tannin architecture and sophisticated finesse promise a tasting journey of the highest caliber, reflecting the character of the estate's 30-year-old vines.
Part of the "Three Pines" collection, this wine, along with a Syrah, hails from the elevated vineyards of the Jonkershoek Valley in Stellenbosch. The name "Three Pines" refers to a lookout point atop the estate, offering views of the winery's highest vineyard sites. This wine is organic certified by Ecocert.
The grapes for this organic Cabernet were cooled overnight to 14°C post-harvest, meticulously hand-sorted berry by berry the following morning. The grapes were then crushed in small, open fermentation vessels and subjected to a cold soak for two to three days until natural fermentation began. The next day, the must was inoculated with South African and Bordeaux-sourced yeasts. 25% of the wine underwent full natural fermentation. Finally, it aged for 20 months in French oak barrels, 70% of which were new.
