Treatment in the cellar

The hand-harvested grapes underwent a 30% destemming, with 70% fermented as whole clusters. Prior to fermentation, the must experienced a four-day cold soak, after which selected yeast cultures were introduced, and the fermenting must was pumped over twice daily. A gentle pressing followed in a traditional basket press, and the wine was transferred into new French oak barrels to complete malolactic fermentation before being moved into a mix of older barrels for 13 months of aging.
