The Cederberg Five Generations Cabernet Sauvignon enchants with its deep, velvet-dark color and lavish bouquet of black licorice, dark cherries, and ripe plums. Cedarwood and pencil shavings provide a nod to its time spent in French oak barrels. This is classic Cabernet, hailing from the cooler climate of the Cape, showcased in its finest form—elegant, with fine tannins and a long, persistent finish.
A premium wine from Cederberg's range, with only 6,700 bottles produced in 2021. The grapes were handpicked and cold-soaked for two days before inoculation. During fermentation, the cap was manually submerged every six hours to maximize color and flavor extraction, peaking at 27°C. Following fermentation, a further 14 to 18-day maceration occurred before pressing and transferring to 225-liter French oak barrels, where malolactic fermentation completed. The wine aged for 18 months, using 83% new oak and 17% once-filled barrels, with only 23 premium casks bottled.
