Die Trauben wurden früh morgens von Hand gelesen und der Saft mit unterschiedlichen Hefestämmen temperaturkontrolliert bei 12 - 14°C kalt fermentiert. Danach lag der Wein noch zwei Monate auf der Hefe, um Fülle und Frucht zu garantieren.
