Audacia Wines crafts unmistakable terroir-specific red wines without the addition of sulfites. Utilizing an innovative, patented technique, they incorporate tannin antioxidants from South African rooibos and honeybush in the winemaking process, allowing for the elimination of sulfites as a chemical preservative. This pioneering approach creates a unique wine category that stands apart from those made with imported wood and tannins. Thus, Audacia produces one of the purest wines in the world, crafted from four natural ingredients: fermented grape juice, yeast, and indigenous naturally sourced rooibos and honeybush tannins, with no chemical or animal product additions.
Trevor Strydom, co-owner of Audacia Wines, spearheaded the development of refined, neutral-tasting, and fully dissolvable tannins from indigenous rooibos and honeybush. Rich in antioxidants, these serve as a substitute for sulfur in winemaking. This new technology enhances fresh fruit characteristics and liberates delicate aromas often suppressed by added sulfites, ensuring enjoyment without associated allergens, irritations, or headaches.
