The Whalehaven Merlot enchants with a deep red color and alluring aromas of mature plums and cranberries. On the palate, this Merlot unfolds a rich tapestry of flavors with delightful hints of dark berries and soft undertones of cedar and vanilla. Exceptionally complex and vibrant, it offers a remarkable tasting journey that is truly enjoyable.
After two days of cold maceration, fermentation concluded at temperatures between 25°C and 28°C. Malolactic fermentation took place in stainless steel tanks fitted with oak staves. The wine matured for 14 months in small French oak barrels, of which 33% were new and 67% were second and third fill.
