The Whalehaven Merlot enchants with a deep red color and alluring aromas of mature plums and cranberries. Nach zwei Tagen kalter Quellung auf der Haut fand der Gärungsprozess bei Temperaturen zwischen 25°C – 28°C seinen Abschluss. Die malolaktische Fermentierung fand in mit Eichenholzdauben versehenen Tanks aus Edelstahl statt. Der Wein reifte 14 Monate in kleinen Fässern aus französischer Eiche, von denen 33 % Neuholz ausmachten sowie 67 % zweit- und drittbelegtes Holz.
