The wind-swept slopes of the Schaapenberg in Somerset West showcase an exceptional terroir for Sauvignon Blanc, and this Waterkloof Sauvignon Blanc 2023 perfectly reflects its origins through small yields of aromatic grapes. Bursting with vibrant notes of fennel and green gooseberries, the nose is complemented by a hint of flint. On the palate, a lively freshness with clear citrus accents of lemon and lime emerges. Fermented in older French oak barrels, this wine reveals nutty and zesty finesse, enhanced by subtle salty and umami undertones. To fully enjoy its depth, decant this distinguished wine for an hour or two before serving.

Handverlesen und handsortiert werden die Trauben am Bund gepresst, um den reinsten Saft zu gewinnen. Die Wildhefe-Gärung findet in alten 600-Liter-Fässern aus französischer Eiche statt. Zehn Monate auf der Hefe ohne Umrühren und keine Zusätze außer Schwefel. Es wurden nur 6200 Flaschen hergestellt.
