Für die Gärung des Saftes wird ausschließlich nur die vorhandene Wildhefe auf den Trauben verwendet. Dies führt zu einem längeren Gärungsprozess mit einer langsamen Freisetzung von Aromen und Geschmack. Der Wein wurde in einem 600L Fass vergoren und vor der Abfüllung noch12 Monate lang auf der Hefe belassen.
