The Vulpes Cana Cabernet Sauvignon enchants with its origins from the Polkadraai Hills in Stellenbosch. This medium-bodied, highly aromatic wine reveals fragrant notes of violet and dark plum, complemented by hints of cassis and earthy depth. On the palate, it showcases a vibrant, balanced fruit expression where plum and cranberry take the spotlight, harmonized by fresh acidity and undertones of mature wood. A subtle, slightly wild character brings unique tension, honoring the Blanford fox (Vulpes cana), native to the wild landscapes of the Middle East. With a structured, firm profile, noticeable tannins, and a lingering, very dry finish, this Cabernet Sauvignon is set to evolve beautifully with bottle age.
Aus den Polkadraai Hills stammen die 25 Jahre alten Reben, die biodynamisch auf verwittertem Granit an westlich ausgerichteten Hängen bewirtschaftet werden. Der Cabernet Sauvignon wird zu 100 % entrappt und mit zertifizierter Biohefe geimpft. Während der gesamten Gärung erfolgte einmal täglich ein manuelles Unterstoßen des Tresterhuts sowie zweimaliges Umpumpen. Nach vollständigem Durchgären wurde der Wein abgezogen und durfte zwei Tage lang zur Klärung ruhen. Anschließend wurde er in zwei gebrauchte 225-Liter-Fässer (6. Belegung) umgefüllt. Der biologische Säureabbau erfolgte auf natürliche Weise, danach wurde der Wein von der Hefe abgezogen.
