Der Saft der Trauben wurde kalt ruhen gelassen, wonach der Gärungsvorgang in Tanks aus Edelstahl stattfand. Der Wein blieb komplett ungeholzt und reifte sechs Monate auf der Hefe, was wunderbare Komplexität in den Wein übertrug.
