Von tiefem und lebhaftem Dunkelrot fließt der Vondeling Philosophie in Glas und verströmt zugleich ein komplexes und sinnliches Bouquet von dunkler Schokolade, schwarzen Kirschen, duftigen Johannisbeeren und Sternanis. Auch feine Anklänge von aromatischen Trüffeln, Zimt und Vanilleschote sowie dezente Untertöne von Grafit lassen sich im Hintergrund erschnuppern. Der dichte und kräftige Gaumen präsentiert sich trotz seiner Wucht zugleich mit klassischer Zurückhaltung und umgarnt die Sinne mit köstlichen Nuancen reifer Pflaumen und intensivem Cassis, untermalt von Zigarrenkiste und ausdrucksvoll breitem Tannin. Die Mischung ist wie folgt: 50% Cabernet Sauvignon, 35% Merlot und 15% Petit Verdot. Philosophie wird nur in Ausnahmejahren produziert, es gab keinen 2020 & 2021 Jahrgang.

"Philosophie" ist das mutige Unterfangen Vondelings, den Verstand, das Herz sowie das Terroir der Weinberge miteinander zu vermählen – eine Zelebration der umwerfenden Vielfalt Vondelings! Jeder Jahrgang hat ein anderes Label und einen anderen Künstler/in und in diesem Jahr hat sich Vondeling für die Gazania ciliaris Pflanze entschieden: aus der Familie der Korbblütler (Asteraceae). Diese Frühlingsfreude verleiht dem Wein Farbe und eine lebendige Note. Der renommierte mexikanische Künstler Pedro Diego Alvarado-Rivera hat sie in ihrer Schlichtheit wunderschön verewigt.

Treatment in the cellar The grapes were harvested by hand in the early hours of the morning and cooled for 24 hours upon arrival at the winery. The next morning, the grapes were completely destemmed and checked for quality berry by berry. Only the best berries were transferred by conveyor belt to open fermentation tanks, where they underwent a five-day cold soaking phase at a controlled temperature of 6°C. After the cold soaking phase was complete, natural spontaneous fermentation began at warmer temperatures using only wild yeasts found on the fruit and in the environment. These wild yeasts impart extraordinary complexity and unmistakable character to the wine. Once fermentation had begun, the fermentation temperature was lowered again to ensure a slow and gentle fermentation process. Regular submerging of the cap of skins promoted the extraction of aromas, colour and tannins and ensured optimal distribution in the wine. After alcoholic fermentation was complete, the wine was transferred to a traditional basket press, where it was pressed directly into 300-litre French oak barrels, in which malolactic fermentation took its full course. The wine matured on its lees for 14 months, after which only the best ten barrels were blended and further processed, spending another eight months in French barriques. Of these ten barrels, only the best five were ultimately approved for the final cuvée and bottled, where the wine was left to rest before release.
