Nach nächtlicher Lese wurden die Trauben mit Hautkontakt sanft gepresst und ohne Zugabe von Holz kalt fermentiert. Nur Freilaufsaft wurde verwendet und der Eingriff in die natürlichen Vinifikationsabläufe wurde hier so minimal wie möglich gehalten.
