The Tokara Sauvignon Blanc 2025 captivates with its delicate straw-yellow color and fresh green accents in the glass. The nose is indulged with a complex bouquet of fresh Cape gooseberries, green apples, lemongrass, and passionate passion fruit. On the palate, the seductive flavors reveal a full-bodied texture, underscored by refreshing citrus notes and a hint of summer blossoms. The finish is long-lasting and lightly saline, enriched with fine nuances of oyster shell that highlight the wine's character.
The hand-harvested grapes for this vibrant Sauvignon Blanc are sourced from Stellenbosch and the cooler Elgin region. Upon arrival at the winery, the grapes were pressed immediately, with the free-run and pressed juice kept separate to rest. Selected yeasts were added to the juice, which fermented at a controlled temperature of 15°C in stainless steel tanks before stabilization and bottling.
