The Tokara Director’s Reserve Red 2021 is a masterpiece characterized by its deep color, presenting a garnet core encircled by a ruby rim. It enchants the senses with an enticing bouquet of red and black fruits, alongside captivating notes of succulent cranberries, baking spices, and graphite. The palate reveals a remarkable precision, offering delightful tastes of dark cherries, ripe blackberries, and luscious black plums. Subtle undertones of fine spices enhance this exciting aromatic tapestry, leading to a pleasantly dry finish with refined, firm tannins.
The grapes were destemmed and meticulously sorted berry by berry for quality. They were then pressed directly into stainless steel tanks and wooden fermentation vessels. Following a five-day cold maceration, spontaneous fermentation commenced without commercial yeasts, utilizing only naturally occurring 'wild' yeasts. During fermentation, the cap was submerged twice daily to maximize extraction. After fermentation, the wine was transferred to French oak barrels for malolactic fermentation. The various wines matured for 22 months in French barriques, of which 54% were new and the remainder previously used. After maturation, the wines were blended, lightly refined, and bottled unfiltered.
